Caption: Steak Pinwheels with Chimichurri & Roasted Sweet Potatoes… juicy, cooked to perfection & loaded with flavor. You can fill these with just about anything you like but the classic combo of spinach, provolone & roasted red peppers might be my favourite. The real trick is to butterfly the flank steak with a really sharp knife so that it’s easier to roll & cooks more evenly. Caption: Steak Tacos with Avocado Salsa… easy, delicious & absolutely bursting with flavour. The tacos are loaded with juicy, marinated, cooked-to-perfection steak topped with a fresh, creamy, tangy & slightly spicy avocado salsa. I used flap steak here (highly underrated in my opinion) but you can sub skirt, flank or ribeye. The marinade is also amazing on chicken. For the salsa, if you like it spicy, add more jalapeño or serrano. If you want it mild, remove the seeds or just omit the chiles altogether. Serve on your favourite warmed tortillas, top with some fresh cilantro + onion & serve with some charred green onion . If you’re a fan of whole-roasted cauliflower, you’ll love this one. Caption: French Onion Pot Roast… rich, deeply savoury & melt-in-your-mouth tender. This takes the flavours you love about a classic French Onion Soup & transforms it into a hearty, comforting & protein-packed main course. Beef chuck gets seared & slowly braised alongside caramelized onions, garlic & thyme in a savoury bone broth until it’s falling apart. Serve it over a bed of creamy mashed potatoes to soak up all the gravy & a side of your favourite green veg (I went with grilled asparagus but it’s equally good with blanched green beans). Caption: Peruvian Lomo Saltado… quick, easy & mind-blowingly delicious. Loaded with tender, stir-fried steak, juicy tomatoes & aromatics in a rich, umami-packed sauce. It also comes together in around 30 minutes. I highly recommend you sear the steak & fry the potatoes in @kettleandfire Beef Tallow. It’s all-natural, made from 100% grass-fed & finished tallow, high-heat safe & gives the stir-fry & potatoes a much deeper flavour profile. I also highly recommend cubing the steak (I like top sirloin) instead of thinly slicing so you can develop a better sear without overcooking the centre.
