Caption: 5 years, 4 cookbooks 💫 my babies! Working on each of these books has taught me so much and I wanted to share a few things with you- ✨Getting started is the most important part When the offer came to me for my first book in the year 2018, I thought I wasn't prepared enough and a sense of doubt was a constant companion. Even after taking up the offer many times, I felt stuck, however, by the end, it became the biggest learning curve in my life. The entire experience was surreal and a big milestone in my baking journey. So I would say that don't be intimidated by opportunities that come your way, grab them with open arms, without any worry as every adventure requires that first big step. ✨Everyone has a role to play in this journey When I was working on the first book I was working all alone and didn't have a team back then. However, shortly I realized that it is impossible to do everything on your own if you want to grow and have a good quality product. I also realized that more than your strengths, you need to be aware of your weaknesses and delegate them to a team that can help you achieve your goals. After the first book, I started building a team and then they say the rest is history. My last three book writing journeys have been super smooth and enjoyable hence making it a rewarding process not only for me but my team as well. ✨Feedback is very important As an individual working on something that takes a long time, say about a year or two to produce, it becomes easy to develop a tunnel vision without realizing that the product needs constant feedback. I always want the final product to be valuable to my audience and therefore I feel it is important to incorporate certain feedback while working on the product. Hence I would highly recommend keeping the feedback journey a continuous one in whatever aspect of your life you are present. For example, for all my books I made it a point to send out the recipes to a couple of friends for a fresh perspective and understand the user journey up close. This has helped me take a pause and understand the minor tweaks I need to make so that the audiences enjoy the recipes to the fullest. To many more 💫

Caption: Episode 12 of #SweetSummerTreats ☀️✨ a series where I make easy, refreshing summer desserts right at home These colourful Fruit Chills are probably the easiest way to make summer feel extra fun 🍓🥝🥭 They’re fruity, icy, refreshing, and taste exactly like the little frozen treats we all grew up having during summer vacations. Ingredients ✨1 cup watermelon ✨½ cup cherries, deseeded ✨1 tbsp lemon juice ✨½ tsp black salt ✨1 cup kiwi ✨½ cup apple ✨1/2 cup water ✨1 cup jamun, deseeded ✨½ cup plum, deseeded ✨1 tsp chaat masala ✨½ tsp black salt ✨½ tbsp lemon juice ✨½ cup water ✨1 + ½ cup mango chunks ✨1 tbsp honey ✨½ cup water Method 1. In a blender jar, add the watermelon, cherries, lemon juice and black salt. Blend it to a smooth juice. Transfer the juice to the popsicle bags using a funnel and seal the bags. 2. ⁠For the green fruit chill - In a blender jar, add the kiwi, apple and water. Blend it to a smooth juice and transfer it to the popsicle bags using a funnel. Seal the bags. 3. One bite and the nostalgia hits instantly ✨ IMLI CANDY Ingredients 400-500g sweet tamarind 2 tbsp icing sugar 1½ tsp black salt (kala namak) 1 tsp roasted cumin powder 1 tsp red chilli powder 1 tsp chaat masala Superfine sugar for coating Instructions 1. Remove the shell and deseed the tamarind. 2. In a mortar pestle, add tamarind, icing sugar, black salt, roasted cumin powder, red chilli powder and chaat masala. 3. Mash everything together till the mixture becomes smooth and comes together like a dough. 4. Caption: Episode 10 of #SweetSummerTreats ☀️✨ a series where I make easy, refreshing summer desserts right at home Nothing beats a chilled glass of homemade Badam Milk on a warm day 💛 Loaded with almonds, saffron, pistachios, and that beautiful cardamom aroma… this recipe feels rich, nostalgic, and so satisfying BADAM MILK Ingredients 4 cups (1 litre) milk ½ cup sugar 1 cup almonds(soaked and peeled) + ¾ cup milk 1 tbsp custard powder + 2 tbsp milk 2 tsp saffron strands + 2 tbsp milk ½ tsp cardamom powder 3 tbsp pistachios, slivered 3 tbsp almonds, slivered Instructions Soak ¾ cup almonds in water overnight. Peel the almonds and blend them into a thick paste along with ¾ cup milk. Now, set a large pot on medium heat and add 1 litre milk to it. Once it starts to simmer, add sugar, almond paste, custard powder slurry, saffron infused milk and cardamom powder. Bring it to a boil and heat until the milk thickens a bit. Add slivered almonds and pistachios and mix well. Let it come to room temperature before storing in bottles.
